How to make South-Indian Sambar | Vengaya Sambar Recipe

If somebody asks me for a word that is synonymous to TAMILNADU or let’s put it as SOUTH-INDIA, I’ll scream without even thinking…. “SAAMBAAR” (சாம்பார்). Steamed rice and Sambar is what Spaghetti and Marinara sauce are in Italy. I can blindly bet ‘Show me ONE and take with you ONE Million’ kinda challenge if you can show me one South-Indian who does not know what Sambar is!     Saambaar (saam as in calm and baar as in bar), the humble stew made with lentils and vegetables, prepared at least once in a week (predominantly on Fridays) in most parts of Tamilnadu, is the first dish my Amma taught me in her kitchen . I do not even remember how old I was then. She chose to teach me the Sambar recipe first because Saambar is the EASIEST and SIMPLEST of ALL the stews (or should I say gravies/sauces) that… Continue reading »

Pakoda Kulambu Recipe ~ Chettinadu Pakoda Kuzhambu ~ South-Indian Style Gravy varieties

Tamilnadu Gravy Varieties | Chettinadu Style Pakkoda Kuzhambu | Pakora Gravy   My mom was born and brought up in Chettinad district. She used to tell us a lot of stories, events and happenings that took place in her beloved village “Kalayarkovil”. Be it the food, her school, the pond, the market, the backyard well, the house or the temple, I almost know everything she experienced in her village. Many interesting stories piling up for my readers . So having said that she’s from the Karaikudi area, I need not talk much about her cooking. Her sauces, be it vegetarian or non-vegetarian, they’re always lip smacking, nobody will say “enough” if she prepares and serves snacks, especially paniyarams. This Pakoda kuzhambu is one of the gravies which I learnt from my mom. In our home, amma makes this at least once every month. Read through to find the mystery spice… Continue reading »

Kadala curry (Puttu kadala curry) – Black Chana curry

Kadala curry (Puttu kadala curry) – Black Chana curry   Is it kadala curry or kadalai curry? Or do you call it kadla curry? Distance between Trichy and Madurai is 130+ kms and traveling in bus took 3+ hrs to reach those days. The bus normally halts for about 10 to 15 minutes in some unusual place for refreshment (!). The wind and breeze in that place will smell awful since there were no proper rest rooms. I hardly breathe during that time and sit with the only thought that the driver and the conductor should return to take the bus quickly. It is really an annoying place, where the tea shops play songs you haven’t ever heard of since your birth and where hawkers get into the bus and sell snacks and edible produce like cucumber and guava.  It is during one such travel when my grandpa met with… Continue reading »
